I have been serving this chicken salad recipe for over 30 years and it has always been my #1 seller on the menu. I usually serve it in the summer but the grapes are coming in so sweet recently I just had the urge to prepare it again. Since last weekend we sold out so fast I made a double batch today and will start serving it at 5 PM tonight. Come to Caribbean Joe’s where I can assure you any food item on our menu blows away ANY other restaurant around.

I’m definitely coming to try then- adore chicken salad! Want to know something weird? Unless it has changed, the best chicken salad sandwiches I have ever had are at the PRMC (now Tidal Health) cafeteria. When a relative was having cancer treatments we would go after each session and get one- ate those right up until the end. Our family jokes about how we should surprise friends by taking them there for lunch when they ask to get together and want us to pick the place.
